Carrot Cake from Orla

Ingredients:
1 3/4 cup sugar
1 1/2 cup oil ( or 1 cup oil +1/2 cup melted butter -Orla think’s that this is the secret to make it moist
4 eggs
2 cups All Purpose flour
2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon salt
3 cups grated carrots 
2 teaspoon vanilla
1 small can crushed pineapple (optional)
Procedure:
1) Pre heat oven to 325 F.
2) Cream sugar and oil. Add eggs one at a time, beating well after each addition.
3) In another bowl, mix flour,baking soda,cinnamon,nutmeg, & salt. Add this to creamed mixture.
4) Blend in carrots, pineapple and vanilla.Pour into greased &lined 13x9x2 rectangular pan.
5) Bake.
